Italian Sausage Soup

This recipe is sweet, savory and dynamic and THE perfect weeknight meal OR weekend meal, because it’s quick to make on the stove or in the crockpot! I ended up making this on the stove, but see below for the simple ingredients and directions. With this variety comes a lot of flexible preference choices!

Ingredients:

1 large clove garlic, minced

1 small onion, diced

1 red bell pepper, diced

1 large carrot, diced

1 can (150z) diced tomatoes

1 can (15oz) kidney beans

1 pound sweet or hot Italian sausage

1 carton (32oz) chicken stock

Dried oregano, to taste

Salt and Pepper, to taste

Extras: add spinach or pasta if you’d like!

Directions:

  1. Add all ingredients (except meat) to crockpot / stovetop pot.

  2. Cook Italian sausage separately and drain excess oil before combing to bigger pot.

  3. Cook in crockpot on high for 1 hour or on stovetop for 20-30 minutes on low. Cover with lid.

  4. 5 minutes before it’s done, add the spinach and pasta if you decided to add those ingredients!
